Even though the timing is atrocious on so many levels we are on holiday this week, a theoretical 3 weeks away from the bar opening and at a point where the brewery is flat out. But hey, everyone needs a break, so this week I’ve been dusting off my very rust IT skills and writing …Read the full article >>
Myself and Caroline now learning way too much about the different options, pros and cons of various PIR linked auto flushing toilet systems and the dangers of not having one. On a more pleasant note the bar design is pretty much finished (sure this is the 3rd time I’ve thought that) and all the various …Read the full article >>
This is more of an memory jogger for myself than anything else: Faithless 23 – Destroyed, had to happen sooner or later, a decision to try and use up a large amount of summer, stella and summit I had lying around but did not use in any of our core beers, when very badly wrong. …Read the full article >>

Sometimes it is what could be perceived as being the most boring purchase ever that genuinely makes me very excited. Today we ordered a new cask washer, 45 ish firkins an hour, bliss.

Whilst examining it (or poking it) …Read the full article >>
This year I am going to try and keep the Faithless range a little more esoteric. As much fun as it is to play with the usual American / New Zealand hops, this year I want to focus more on adjuncts (think the Oysters, Lemon Grass etc of previous beers) and yeast, whilst trying to …Read the full article >>
A Chocolate & Sour Cherry Stout aged in Rioja Barrels then seeded with Brett and Lambic I’ve been talking / thinking about doing the above beer for ages and before we went on holiday last August I ordered the wine barrels for delivery some time early September and promptly forgot about it. Once the …Read the full article >>
Blatantly we / I have not updated this for ages, mainly as we are very busy, but also, because what starts off as new an exciting, becomes the norm. That is not to say it is not still hugely enjoyable (if not damn cold at the moment), but it gets harder to find things to …Read the full article >>
